Since Courteney Cox joined Instagram In 2019 (thanks to Lisa Kudrow and Ellen DeGeneres, BTW) we loved taking a look at the former Friends The life of the star, whether she posts old Photos of their parents or flaunt them Daughter’s murderous voice. But our favorite post so far is undoubtedly ridiculously simple Baked Chicken Recipe, which only takes five ingredients and about an hour and a half to cook.

How to Make Courteney Cox’s Baked Chicken

We know, we know: Cooking whole chicken feels like a big job. But this is basically impossible to screw up. What makes this recipe such a breeze is that it relies on nothing but dried herbs, salt, and the chicken’s natural juices. One time in the oven is enough to get juicy and tender on the inside and crispy and browned on the outside. (PS: if you want the skin extra crispy, add a little baking powder to the kosher salt before sprinkling both on the bird, then leave to rest in the fridge overnight before baking.)

Here’s What You Need to Make Courteney Cox’s Baked Chicken at Home:

ingredients

  • A 4 pound whole chicken
  • Olive oil cooking spray
  • Kosher salt
  • Herbs of Provence*
  • 3 to 4 leeks

Step 1: Preheat the oven to 425 ° C. Place the chicken on a baking sheet or skillet. Cover the entire chicken breast-side down with olive oil cooking spray. Then sprinkle generously with kosher salt and Provence herbs. Repeat on both sides of the chicken and breast-side up.

Step 2: Bake the chicken for 25 minutes. While baking, cut the leek into thin slices, soak and rinse.

Step 3: After the 25 minutes are up, reduce the heat to 350 ° F and cook for an additional 10 minutes. Then add the leek around the chicken to the pan and bake for another 30 to 35 minutes.

Step 4: After 40 minutes, insert a thermometer into the thickest part of the thigh without touching the bone. Once it reads 165 ° F, the chicken is done. Let it rest for 5 to 10 minutes before cutting.

* A mixture of marjoram, rosemary, thyme, oregano, and summer savory that you can usually find in the grocery store’s spices section.
