As Jennifer Aniston posted a picture of her “perfect salad” on her hair care brand Living Proof’s Instagram account in 2015, she probably never thought he’d turn heads with it. And yet we’re still talking about it here almost seven years later. Though the post about Aniston’s salad was long since deleted, thanks to the creator, the recipe recently resurfaced on TikTok @TheModernNonna. Since then it has been shared and recreated so many times that I began to wonder what could possibly make this salad so special.
According to her Friends co-star Courteney Cox, Aniston “just loves food” — and salads in particular. Cox told that Los Angeles Times that Aniston made a “refined” Cobb salad on set, which the two ate with Lisa Kudrow for lunch every day for 10 years. It’s unclear how many ingredients this salad shared with the viral one, but after testing this one, I can see why Aniston’s friends and castmates were so addicted to her food.
Aniston described the now-TikTok-famous salad as containing bulgur, cucumber, parsley, mint, red onion, chickpeas, feta cheese, and pistachios. Unlike many of the TikToks that recreate it, no lemon juice or olive oil is added, and it appears the ingredients are chopped a little more finely. The ratios of these ingredients, as well as the inclusion of chickpeas and pistachios, seem to vary slightly in every video I’ve seen, so I based my version on the photo Aniston shared in 2015.
Although she didn’t provide exact measurements, I thought the salad was still easy to make because all you really have to do is cut and toss it. While there’s no dressing (unless you change up the recipe like others do), it’s definitely not dry or bland, it’s packed with flavor. It also had such a satisfying texture and I literally couldn’t stop eating it – it was that good. - 2 cups bulgur wheat
1 cup cucumber
1/4 cup red onion
1/2 cup parsley
1/4 cup fresh mint
1/2 cup feta
15 ounces. can chickpeas
1/4 cup shelled pistachios
- Cook the bulgur until light and fluffy like rice, or according to package directions, then allow to cool.
- Finely chop the cucumber, red onion, parsley and fresh mint and place in a large salad bowl.
- Drain and add a can of chickpeas along with the cooked bulgur and shelled pistachios.
- Crumble the feta over the salad and mix. Serve and enjoy!
